I remember fondly the first Thanksgiving dinner I hosted…AKA my first-time making a whole turkey. It was just a couple of short years back and I was SO nervous! What should the bird was released dry, What if it was not cooked throughout, Ahhhhh! I had a pal give me some words of encouragement and remind me that your turkey is simply a really big chicken, and I had roasted LOTS of chickens before. So I did some investigation and after finding tons of different strategies to make the perfect” turkey, I decided to blend a few methods. The turkey was edible and I felt accomplished.

Since then I've made whole turkeys just about every year at Thanksgiving. I've basted. I've brined. I've rubbed. If you're thinking about brining your turkey, and do not mind standing up at 2am to begin it, do it! The turkey that year was crazy good. However, many butter associated with a great dry rub and aromatics has grown to be my favorite flavoring system. The real secret to the present bird would be the foil. Placing aluminum foil within the turkey breast helps dissipate many of the heat. Since dark meat takes longer in order to cook than the light meat, this process lets the thighs and legs acquire roast on whilst the breast gently cooks. Once the foil comes off, everything cooks with the same pace understanding that gorgeous golden skin forms. This turkey is juicy and super flavorful!

Yield 1 turkey


1 1/2 yellow onions, peeled and halved

4 garlic cloves, peeled


Preheat your oven to 325 degrees F.

In a bowl, combine the salt, thyme, sage, paprika, pepper, and ground mustard until evenly incorporated.

Remove the turkey by reviewing the packaging. From the bird's cavity, take away the neck plus the bag containing the gizzards and heart. (You can keep these things to make stock or discard them.)

Use a number of paper towels to dry the skin from the bird and within the cavity.


Lift the skin within the turkey breast (quietly closest on the legs) and slide your hand under your skin separating it from your breast meat. Do this on both sides with the breast.

Insert three pats of butter under the epidermis on one side fo the turkey breast spreading them around evenly. Repeat on the reverse side.

Sprinkle the dry rub all on the turkey - breast, legs, wings, everything else you can see. Using your hands press the rub into your skin a little. If you have any extra rub sprinkle it from the cavity.

Place the onion halves and garlic cloves in the turkey's cavity.


Transfer the bird for a roasting pan. (I like to make use of a pan having a rack to maintain the bottom with the turkey from getting soggy.)

Take an excellent sized section of foil and set it on the turkey breast. (You want to produce sure on the foil piece is very large enough to fit on the whole breast.) Press down and mold the foil for the breast., permit the ends stand out if the foil's somewhat big.

Place the turkey within the oven and roast for two main hours. Carefully eliminate the foil on the turkey. Notes

The cooking time in this particular recipe is made for up into a 12-pound turkey. Add fifteen minutes of cook time at 325 degrees F for every additional pound.

Hi Cassie! This will be the 5th year I've designed a whole turkey for Thanksgiving, and this would be the recipe I use whenever. Really the most essential thing to do is adjust the cooking time for your weight of your respective bird. Use a meat thermometer to look for the internal temperature on the meat for making sure the breast and legs both reach 165 degrees F. Those are absolute basics. 🙂

The foil in the bird thing is usually a trick I grabbed from watching Alton Brown. It helps ensure the breast meat does not get overcooked. Dark meat takes longer to prepare than light meat and also the foil helps deflect a little from the heat to slow the cooking with the breast slightly. That's the one trick” I get ready.

The butter under skin is what helps it get crispy, along with the veggies and herbs from the cavity are for aromatics as the turkey roasts (and totally optional in all honesty). I afflict like this seasoning rub a good deal, however, you could use regular salt & pepper too. I've also mixed fresh chopped sage into your butter before slathering it under the epidermis and it's delicious.

I'm not implying I have some magical trick that produces this recipe superior to any other around. And you're right, there are TONS of posts saying theirs may be the best or they understand the secret” to your perfect bird. This recipe is well known at my house and possesses always produced a beautiful, juicy bird. So I prepare it. 🙂 Just remember, a turkey is like quite a, really big chicken. You can do it!!

Do you would imagine the turkey would produce equally as well in the electric roaster, Would you still place the foil on and cover it, I sort of need the oven space so hoping that this electric roaster work 🙂

So that is my 1st year cooking a turkey, and I'm incredibly nervous. Your recipe doesn't come off as too intimidating, although I do have a very couple of questions. First, I don't own a roasting rack to put into your pan… might you say that this can be necessary,

Also, I'm cooking for just a large group and have absolutely been given not one but TWO 12 lb turkeys cooking. Do you have any ideas for how I'll have to adjust enough time as I try cooking 2 turkeys immediately,, Will this really double enough time,
