Instructions
Combine the flour, sugar, cinnamon, nutmeg, baking powder, baking soda, and salt in a very large mixing bowl.
In a little bowl, mix together the buttermilk, vanilla, egg, and oil until well combined.
Pour the wet ingredients to the dry and whisk together until the majority of the lumps have passed away. Do not overmix.
Heat a substantial skillet over medium heat and spray with cooking spray.
Pour 1/4 cup of batter in to the skillet and cook until bubbles form on the outside.
Flip the pancake and cook until browned about the bottom and also the center is completed.
Keep pancakes over a cookie sheet within a warm oven until willing to serve.

I thought these tasted a lot like Bisquick, YUM!
Any the thing it why mine were flat, I want fluffy these were not, I wonder if humidity or altitude as well could affect them,

If you have regular milk, you are able to sour it with all the vinegar, thus turning it into a great buttermilk substitute. I often try this as we seldom keep buttermilk readily available.
