I mean, why got married in a church this will let you reception at the golf club when you can actually have it using a remote river this is a five hour drive from your airport along with a 30 minute scramble down a mountain, Not to mention paddling along the river not merely with our personal belongings but everything that's needed to plan for a 80 people wedding. Plus a week long trip around the river for many of people.

So anyway, after squatting on the fireplace making pancake after pancake, I felt the Pancake Queen title was rather deserved and needed!
Tip: Sometimes I makeup pancake mixes and them in ziplock bags, jars or within a shake-and-pour bottle, similar to what you can get at supermarkets! For this recipe, you might need a 1.5L/1.5Qt+ bottle to depart enough headroom for that required liquids + shaking. (I don't utilize the bottle often because it is a pain for getting flour involved with it).

PS Food styling tip: A very observant reader commented the maple syrup doesn't resemble maple syrup anf the husband is half right! It is actually maple syrup but I placed it within the freezer to thicken (doesn't necessarily freeze hard) so that it would form nice thick drips along the side on the pancakes and sit for the surface on the top pancake. It's a food styling trick! If I used normal room temperature maple syrup, it's much thinner so I wouldn't normally get those drips and it also sinks quickly into the surface on the pancake. 🙂 I once tried honey nevertheless the colour isn't deep enough, and golden syrup is simply too dark.

4 tsp baking powder (Note 1)
1/4 cup / 55g white sugar (caster / super fine is better but not essential)
Pinch of salt
1 egg
1 3/4 cups / 435 ml cups milk (any style, any fat %)
1 tsp vanilla flavor or essence
4 tsp butter , for cooking
Instructions
Place flour, baking powder, sugar and salt in the bowl, whisk to blend.
Add egg, milk and vanilla. Whisk until lump free - don't than thirty seconds.
Heat a non stick skillet - use medium heat in case you have a strong stove, medium high when you have a weak one. Add a small amount of butter (about 1/2 tsp) and swirl to melt. Use paper towel to mostly wipe the butter off (this will be the trick to protect yourself from a dodgy 1st pancake).
Pour 1/4 cup batter in to the middle in the fry pan (I use a rather heaped soft ice cream scoop with lever, standard is 1/4 cup).
Swirl pan lightly to spread or utilize ice cream scoop edge to spread into 11cm / 4.5" circle (ruler is important) (joking!).
When bubbles rise on the surface (see video), flip and cook sleep issues until golden.
Remove and make warm inside a low oven.
Use more butter every several pancakes - depends how good your non stick coating is.
Serve with toppings usually chosen!
Recipe Notes
1. Flour: The flour and baking powder might be replaced with 2 cups + 1 tbsp self raising flour. The flour can even be substituted with wheat grains flour.
2. STOVE TEMP: The trick with pancakes is receiving the stove temp perfect - it must take 30 seconds to the bubbles to show up then 30 - 45 seconds around the other side until golden, 1 minute per pancake. So adjust because you cook, so if you are impatient much like me, get 2 pans going in the same time!
3. Some TOPPINGS: Butter, maple syrup, fruit sauces, jam, cream, freshly squeezed lemon juice + sugar (that is terrific), bacon + maple syrup (cardiac arrest risk is worth it), yoghurt, macerated strawberries (1 cup chopped strawberries tossed with 1 tbsp white sugar, leave for ten mins = strawberries in red juice, see photo in post).
4. PRE-MADE PANCAKE MIX: Place the flour, salt, baking powder and sugar within a ziplock bag, large jar or bottle. Then add the egg, vanilla and milk when you want to makeup a batch of pancakes! If you wish to be able to add the liquids in the jar or bottle then pour the batter straight in the pan, it will need to be 1.5L/1.5Qt or greater. The bottled pictured in post is really a 2 litre milk carton (only dry ingredients will be in it).
