If you don't own anything nice to state, don't say nearly anything. That's what my mom always explained. Maybe you've heard exactly the same from your mom. Over the past week, as I've been met with some ugly facets of my own personality as well as the food blog world, I've gone quiet. Insecurities and income instability have me questioning my every move.

I was struggling to find words worth sharing this morning when my phone beeped at me. Pool day,” it asked. Those two little words reminded me that I get some sweet friends and also the freedom to consider off work with an afternoon. All is not lost!

I've already enjoyed stir-fry leftovers in the morning today. This dish is usually a relatively quick weeknight meal that features a wholesome dose of kale and several of the most popular Thai flavors.

Feel absolve to throw in any thinly sliced vegetables that you could have from the fridge, too. Red bell pepper is lovely, similar to chopped Brussels sprouts. I bet thinly sliced carrots could well be great, too. I actually meant to include bell pepper inside final photos that you see inside prep photos, but my second store-bought bell pepper was moldy with this report. That's probably what I deserve for choosing an out-of-season pepper from who-knows-where. Guilty as charged.

I found the camp recipe with this stir fry in a awesome new cookbook that recently landed on my own doorstep, thanks to a PR rep. It is appropriately titled, Brassicas: Cooking the World's Healthiest Vegetables

Brassicas will be the cruciferous class of vegetables including kale, brussels sprouts, cauliflower along with other less trendy ingredients, like bok choy and turnips. Did you are aware that arugula is really a brassica, That was news if you ask me. Brassicas assist in preventing cancer, reduce inflammation and promote liver detoxification, so needless to state, they can be a worthy (and delicious!) addition for your plate.

The book's original recipe for spicy kale fried rice was actually tasty, but I couldn't help adding some complementary flavors. While I was savoring my first test run, I remembered how great lime and cilantro select kale inside my burritos Then I recalled Heidi Swanson's amazing kale and coconut flake salad I added the above to my second make an attempt to loved it much more.

I thought scrambled eggs may be too weird to incorporate with the coconut flakes, but eggs and coconut produce a marvelous pair. The big, toasted coconut flakes are savory and remind me of bacon. We all realize that bacon and eggs belong together, so today, I show you a healthier, vegetarian option. You could take this dish a pace further and add in coconut bacon after cooking, but I just incorporated the coconut flakes to the cooking process. Hope you'll take my word because of it and try it out!

A vegetarian weeknight stir fry with sautéed kale, coconut flakes and rice. The dish is fully gone with Thai flavors like lime, cilantro and sriracha. For best results, cook your rice before hand and refrigerate until lovely start cooking (see note). This dish all fits in place very quickly—be guaranteed to have your ingredients prepped in advance and placed at the stove, and also a big empty bowl with the cooked components. Recipe yields 2 servings.

Ingredients


2 big cloves garlic, pressed or minced

¾ cup chopped green onions (about ½ bunch)


Optional: 1 cup thinly sliced vegetables, like bell pepper, carrot or Brussels sprouts

1 medium bunch kale (preferably Lacinato but curly green is great, too), ribs removed leaving finely shredded

¼ teaspoon fine grain sea salt


2 cups cooked and chilled brown rice

2 teaspoons reduced-sodium tamari or soy sauce


2 teaspoons chili garlic sauce or sriracha

1 lime, halved


Instructions

Heat a sizable (12-inch or wider) wok, surefire skillet or non-stick frying pan over medium-high heat. Once the pan is hot enough that your drop of water sizzles on-contact, add 1 teaspoon oil. Pour within the eggs and cook, stirring occasionally, before the eggs are scrambled and lightly set. Transfer the eggs in your empty bowl. Wipe out the pan when necessary with a paper towel (be cautious, it's hot!).

Add 1 tablespoon oil to your pan and add the garlic, green onions and optional additional vegetables. Cook until fragrant or before the vegetables are tender, stirring frequently, for half a minute or longer. Add the kale and salt. Continue to cook till the kale is wilted and tender, stirring frequently, about 2 minutes. Transfer the items in the pan in your bowl of eggs.

Add the remainder of the 2 teaspoons oil towards the pan. Pour from the coconut flakes and cook, stirring frequently, before the flakes are lightly golden. Add the rice towards the pan and cook, stirring occasionally, before the rice is hot, about 3 minutes.

Pour the valuables in the bowl back in the pan. Add the tamari, chili garlic sauce and juice of ½ lime. Stir to blend and set aside.

Slice the remainder ½ lime into wedges, then divide the stir-fry into individual bowls. Garnish with wedges of lime and also a sprinkling of torn cilantro leaves, with jars of tamari, chili garlic sauce and/or red pepper flakes quietly, for people who might want more.

Notes


Where to obtain coconut flakes: Look for them from the baking section at Whole Foods, whole foods stores or well-stocked markets. The brands I see generally are Let's Do Organic” (green package) and Bob's Red Mill.

Rice notes: Stir fries always perform best with chilled rice. You'll need to cook about ⅔ cup dried rice to yield 2 cups cooked. If you're quickly, spread the cooked rice on the rimmed baking sheet and set it inside fridge or freezer to cool down.

Make it vegan/egg free: Skip the eggs by heating the pan after which start cooking with vehicle.


Make it gluten free: Make guaranteed to use a gluten-free soy sauce, like tamari.

Storage suggestions: The dish tastes great the very next day, whether reheated or served at room temperature.

Not sure precisely what's got you bummed, but I just wanted to convey from a random blog follower (who's not just all that good of an cook) that I always love your site content, and possess probably pinned half your website. So sorry about your negative experiences, cannot imagine what they could well be; you possess a lovely blog accessible across to be a lovely person also. I am not much of a vegetarian but your website constantly inspires me to nibble on healthier as well as cook delicious meatless meals not because these are pointedly meatless but because they may be wonderful meals by themselves right.

And eggs with coconut = delicious! Once when I only agreed to be lazily throwing stuff together trying to produce a semblance of dinner ended up using a cooked kale hot salad with toasted coconut and peanuts topped with two fried eggs, sooo good. I help it become quite often now there are Indonesian dishes that pair eggs with coconut too :)

Yeah, I think spinach would get yourself a little soggy. Kale retains its texture provided that you don't drink too much! This stir fry can be a delicious approach to consume plenty of greens within a sitting.

Hi Kate, I like They carry organic raw nuts that are a bit expensive, but I believe of what I'm getting. I buy in big amounts and refrigerate them, fat I don't eat them in large quantities. Also, they carry raw organic sunflower seeds, quinoa, kaniwa, chia seeds, dried fruits, nut flours, hemp seeds & products, cacao nibs, and much more. My small town doesn't carry what I need to get a healthy vegan diet so it will be worth it in my experience.

Google scrambled tofu turmeric” for tips on how to create scramble egg alternative to any recipe. Turmeric can be a very healthy spice also it doesn't impart greatly taste if not added for some other Asian spices.

I really adore you for writing this! I bought the hugest bundles of purple kale for the farmer's market the other day because they were so beautiful and tempting and such a fantastic price. I didn't have got plans for him or her though. PERFECT TIMING! I love the flavors here, each of the garlic and coconut and everything I love about Thai food! I'm always gleaning recipes which help me waste veggies and this also is perfect. Going on soon's menu, appreciate it!

I've been drooling over this recipe as you posted, and lastly decided I would help it become today no matter my coconut flake amnesia which hits every time I go into the market. This recipe is perfectly scrumptious! I did use coconut oil during veggie sautée time, plus it was magic. Thank you, again, Kate. Kate - I made this the other day for my spouse & I and now we loved it! I subbed quinoa to the brown rice and added finely chopped carrots & a red and orange bell pepper…it exercised really well. The flavors were awesome and I'm awaiting leftovers today :)

Kate, we loved this dish! Made this tonight for lunch. Delicious!! I added some grated ginger to their cooking vegetables plus the rice which did wonders and added a great brightness. Also, not too I'm anyone to plug Trader Joes, however they have bags of roasted coconut chips which can be crispy and super tasty, and needed to get lightly toasted inside a dry skillet before adding. This is definitely going within the dinner rotation. Thank you!

Just made this for lunch and my whole family had seconds! So good! A couple changes: I forgot to precook the rice, to be able soon the way it was finished cooking, it went in. I used this approach to bake 20 oz extra firm tofu in place with the eggs: -

I used combining carrots and broccoli because veggies and used over 1 cup, maybe 1 3/4.

I have a very garden stuffed with Kale and found this recipe while looking for different ways to work with my harvest. YUM! Thanks for your re-post on that one, otherwise do not possess seen it. I totally bought shredded coconut unintentionally (despite clear instructions to never use shredded coconut), however used it and yes it tasted great. Toasted up golden brown and mixed with all the rice rather well. I used brussels sprouts and they also worked great, might use red bell pepper just by color the next occasion. This will definitely be produced again when we have leftover rice.

This recipe was great! I did several modifications - I used chili oil to the heat and added 3/4 of coconut milk slowly when I was toasting the flakes and rice. The coconut flakes/rice absorbed each of the flavour and it also made it really rich and tasty. This was a remarkable recipe though, I really loved it therefore did my boyfriend :)

Made this recipe twice until now but it is usually a new fave. Both times I've doubled the sauce and veggies. Basically I get rid of the veggies inside my fridge when I ensure it is.
