Sweet & Smoky Seared Tilapia

TJ's Smoky Peach Salsa
TJ's Lemons &Cilantro, for garnish
Directions
Microwave rice in line with package directions. Pat tilapia filets dry with paper towels and generously season both parties with paprika, sea salt & pepper.
In a nonstick skillet over medium-high heat, melt ghee. Add tilapia to skillet and cook 2-3 minutes per side, until fish is opaque and flakes easily which has a fork. Remove from heat.
To assemble: Divide rice among two plates and top each which has a tilapia filet. Drizzle filets with desired level of salsa, and garnish with lemon slices and cilantro. Enjoy immediately.
