Baked Almond Flour Pancakes With Orange And Thyme Low Carb, Gluten-Free, Keto
Today guys, I got you a Baked Almond Flour Pancake with Orange and Thyme and I must thank Ricola for inspiring me to come up with this recipe during their rather awesome Swissification Masterclass (highlights below in the post). BeMoreSwiss, but also taste-tested my way through gorgeous herbal, floral and citrus flavour combinations.
By the end, they got me wanting to try more sugar-free eats and using more natural flavouring in my recipes hence this Low Carb Pancake. All the good things folks, all the good things. Picture this grain free pancake… in a middle of the table surrounded by a gazillion and one berries, melted chocolate, sugar-free jam and almond butter. With lots and lots of forks, filled plates and happy laughter. It is baked - so no standing over the cooker to fry a gazillion pancakes. Because it is sugar-free - but with a touch of sweetness from the almond flour.
Orange and Thyme - awesome flavour combination right there. It is gluten-free too - soooooooo inclusive right, Repeat after me - LOW CARB - no more words needed. Now let’s get down to the crux of the matter. To make this Low Carb Pancake you whiz everything but the thyme in the blender, add the batter and thyme to a silicon dish and bake till cooked through.
There are 5 Freestyle SmartPoints per serving. Now let’s talk Low Carb Pancakes inspiration. That would be down to the super lovely Ricola folk. I bet you all know them, but just in case these guys do awesome sugar-free herb drops and sweets. I love the unique taste of the original Ricola sweets, invented in 1940 with a secret recipe that remains unchanged to this very day.
The recipe includes no less than 13 special herbs such as burnet, peppermint, sage, elder blossom and thyme (yeap). These Swiss mountain grown herbs are as pure and high quality as you can get, being free from pesticides and pollutants. I tend to have a pack of Ricola in the bottom of my bag for those days that I need to soothe my throat or just need a refreshing treat when out and about.
Ricola have since brought out more sweets all packed full of gorgeous flavours including alpine sage, elderflower cherry honey, all of which also feature a selection of the 13 herbs. I find it hard to choose a favourite. Just when I think I have one, I try another and change my mind. Currently, it is a close call between the cranberry and the apple and mint ones. Tomorrow on the other hand………..
Ricola kindly hosted me at a Swisstification Masterclass (and I love them all the more for it). Along with one of the best meals I have ever had (all inspired by the 13 Swiss herbs), I learn that I was about 65 % Swiss. I will be working rather hard to make it up to at least 85% Swiss.
Make the most of your surroundings, regardless of the weather! Practice punctuality - Everything always runs on time in Switzerland which is the most awesome fact ever. I need to make my goal this year. Find your work-life balance - I love doing what I do on this website but it can mean a lot more overtime. The brand new post-it note on my computer now says ‘don’t forget to play too’.
Be friendly - In Switzerland, it’s polite to greet everyone who crosses your path - especially those who quite literally cross your path on hiking trails. Luckily I score quite highly on this as it is common to do so where I live, but something to watch out for when travelling. Remember to rest - Sunday is a day of rest in Switzerland, with most businesses closing as people focus on spending quality time with family and friends.
I think I will be booking in a few Sunday family brunches this summer. Learn a new language. The Swiss clearly beat me on this with their 4 languages to my 2 and half. I am not 100 % sure I will ever get to 4 but I am certainly happy to go visit Switzerland and immerse myself in the different languages, landscape and of course the food that comes with it all.
