I have to give all credit for this recipe to D.J. He has perfected pancakes. This is his recipe for buttermilk pancakes. To make them Christmassy, I added red and green food coloring, and poured the batter into squirt bottles. From there, I placed Christmas shaped cookie cutters on my griddle, and squirted the pancake batter into the cookie cutter. Once it was set on one side, the cookie cutter was easy to remove with a pair of tongs, and flipped perfectly. It was so much fun, and I got to be creative!

I made them as a test run last week just to make sure it would work with the food coloring and shapes like I thought it would in my head, and it did! 1. In a large bowl, mix flour, baking powder, sugar, salt and baking soda with a whisk. 2. In another bowl, mix eggs, milk, buttermilk and butter until well combined. 3. With a wooden spoon stir wet mixture into dry. Be careful not to over stir. 4. Heat a griddle, and prepare with non-stick spray. Pour about 1/2 cup per pancake and cook on each side until golden brown.

It’s as quick as reaching out for a box of pre-made pancake mix, reading instructions and adding additional ingredients to it. And you don’t even have to go to the store to buy the ingredients as pretty much every kitchen has flour, sugar, salt, baking soda and buttermilk. These pancakes are not very sweet so serve them dusted with powdered sugar, drizzled with maple or corn syrup, or honey, or with your favorite jam on the side.

If you have someone in your house who can't or won't eat milk products or you are trying to eliminate dairy foods from your own diet, pancakes made with other liquids can be just as good as those with milk. Use your favorite pancake recipe with a number of options. Generally you won't have to make any other adjustments unless you add an acid such as fruit juice. In that case, add 1/4 tsp.

Choose from soy milk, almond milk, rice milk, light coconut milk or any other nondairy milk available in your grocery store. Replace the milk called for in your pancake recipe with any of these liquids. Replace the milk in your recipe with water. Because milk adds flavor to the pancakes, add additional flavor to pancakes made with water. Try vanilla, blueberries, raisins, nuts or lemon zest. Try using half water and half orange juice instead of milk. Add 1/4 tsp. of baking powder to your recipe if you add orange juice.

Use apple juice or white grape juice to replace the milk in your recipe. This works really well with whole-grain pancakes. To balance the sweetness, omit the sugar called for in your pancake recipe.
