Coconut Buttermilk Pancakes, 2 Points+
Do you ever have mornings where you wake up starving in a way that you just need to have a real, hearty, breakfast, I think that is what happens to me whenever I have a light dinner the night before. Believe it or not, I actually didn’t feel like eggs or an egg roll…I am normally a savory breakfast eater, however, sometimes I just crave Flap Jacks.
I wanted these deliciously, healthy, Coconut Buttermilk Pancakes! What he doesn’t know is that I snuck in some healthy “stuff” into his flapjacks. He can always tell whenever I use whole wheat flour in anything I make or bake. However, I have found I can make flapjacks using Wheat Germ and he can never tell the difference when mixed with white whole wheat flour. The peeps over at Krestchmer asked if I’d help them develop a few recipes using their super food Wheat Germ and I gladly accepted the challenge.
I usually keep a jar of Wheat Germ on hand to mix in granolas, to add moisture when making meatballs or meatloaf (just like adding bread crumbs), and for sprinkling in oats or cereals. I love that you can boost the nutrition of almost any recipe you use by cooking with wheat germ without breaking into your calorie budget. When you are craving pancakes or waffles, whip up a batch of these fluffy decadent, buttermilk pancakes with a coconut twist in less than 20 minutes for a breakfast that is both delicious and nutritious.
TIP: Make your own buttermilk by combining 1 1/2 cups milk with 1 1/2 Tbsp. 1. In a large mixing bowl, whisk together the dry ingredients (flour through coconut). Add the buttermilk, oil, coconut extra, egg and egg white mixing just until combined. 2. Heat a nonstick griddle or nonstick skillet coated with cooking spray over medium heat.
Spoon about 1/4 cup batter per pancake onto griddle. Turn pancakes over when tops are covered with bubbles and edges look slightly browned or cooked, about 3-4 minutes per side. Whisk together the dry ingredients then add the wet ingredients mixing just until blended. Use a 1/4 cup measuring cup to pour pancakes onto the prepared griddle and cook until bubbles form at the top and the bottoms look slightly golden/cooked.
Flip and continue cooking until the other side is browned, about 3-4 minutes per side. The baking powder and baking soda are what make these flapjacks light and puffy! Add coconut “snowflakes’, whipped butter and pure maple syrup. I served mine up with “coconut banana chips”…. Macadamia Cookie Coffee thanks to my fantastic Hair Dresser. I love her and the fact that she searched to buy and give me one of my favorite coffees. Work flew by this morning and before I knew it, it was time to break for lunch.
I didn’t have ham We actually headed out to Panera for a You Pick Two soup combo. BBQ Chopped Chicken Salad with the dressing on the side. I actually never use the dressing because the BBQ sauce adds enough flavor. Plus the bread that 99.9% of the time always sounds better than an apple or chips.
I had a 1/4 of the red velvet cake cookie that we shared…it was ok. The thing I liked the most about it was the crunchy and chewy texture. After work we headed out to see the movie Jack Reacher. Now I know that Tom Cruise is nothing like the character described in the books, but, the movie was actually pretty good. My movie snack included 2 Tbsp. Blue Diamond Habanero BBQ Almonds we picked up. ’s slightly sweet and only a little spicy and it totally reminded me of fried BBQ chicken for some reason LOL.
I came across this recipe on Pinterest and since I had some buttermilk on hand I knew it would be a good time to try it. Who can resist a good pancake, I just have to say that while IHOP's pancakes are terrific, the coffee lately has been downright awful. Has anyone else been there lately and ordered coffee,
