Put dry ingredients in a large mixing bowl.Crack eggs into small bowl and beat till bubbles start to form. Stir in vanilla extract and oil.Combine egg, oil and vanilla with dry ingredients and water and mix thoroughly to avoid lumps.Scoop batter into medium-heat skillet in 1/3 cupfuls. Flip when bubbles form and edges begin to dry. Do not press down after flipping - this prevents rising of the pancake batter during cooking. Please rate only recipes you have prepared.

I think the olive oil made them too heavy. This a good recipe. I think it might be a bit better if you add a little more vanilla, and probably a little more sugar. These I thought were really flat - I think would almost be used for crepes, I ended up adding more flour, vanilla and sugar.
Came out great, very fluffy and cakey. I added tons of blueberries. The trick to making these not flat is to really whisk the eggs well, and DON'T "mix thoroughly to avoid lumps." Don't overstir and they come out fine. If they're still flat, try adding more flour, sugar and vanilla like Kimberly Suggested, or reduce the amount of water. My family loved these.
I found them to be very fluffy-not flat all. Thank you for sharing! I made these with a little extra sugar, vanilla, and flour (a splash of each). They were a tad flat but tasted great! I made these this morning. Kids loved them. they were flat for me too. I missed some directions in my rush to make them. And I made my baking powder from scratch this morning too.
Kids loved them. We thought they were tasty. We'll try them again. I made these pancakes this morning and they were great! I did add 1 tsp. I didn't think they came out flat at all. I suggest halfing it unless you have four hungry people expecting flapjacks. I added a little flour and extra sugar.
I turned up the heat and the next batch was nice and fluffy. I just made these pancakes and I didn't add the whole 2 cups of water. Add To much water and pancakes turn into crapes, so i only added half that. Or you can just add more flour like some other people did. I also added blueberries which makes pancakes so much better! Totally loved these especially since they were milkless.
I did add a little more sugar though but they really reminded me of home as they went really well with the sugar, cinnamon and lime we had them with. Tried and like them. Add 2 1/2 tsp. Baking powder and they fluff up just fine. Beat or whisk as advised. Take into consideration the flour used whether high grade or bakers choice.
It does matter when baking. Have a good day. My kids enjoyed them, I added cocoa powder. A little chocolate in the morning is never a bad thing. Great recipe if you have no milk in the house. I added a bit more baking powder and sugar, and one less egg (only had two) and they came out wonderful and delicious!
I like this one and wont use another one. No matter what the kids ate it all up and wanted more. Thanks, I use it every weekend now.. The consensus is that these were great. We did double the batch, a extra vanilla and cut back on the water. Everything else he followed as directed.
Definitely will use recipe again. I tried these for my parents and they loved it and it didn't come out flat at all they actually came out rather fluffy and cakey. Just made these. My kids loved them, and they came out fluffy. I used about 1-1 1/2 cups of water. Great recipe if u don't have milk! What can I say but WOW!
