Thick, Fluffy Oatmeal Pancakes... And Food Trucks

Thick, fluffy whole wheat pancakes flavored with oats and cinnamon. An all-in-one breakfast that couldn’t get better. Food trucks. A.k.a. stylish four-wheeled vehicles in popular culture designed to serve a particular type of dish, not limited to cupcakes, kebabs, sandwiches, burritos, pancakes and of course, burgers. So when there’s a crowd of people lined up behind a colorful four-wheeled drive, you join it. And if there’s a festival celebrating the genius of food trucks, you go.

Warsaw never ceases to amaze me. When I moved here, the city’s skyline was limited to four skyscrapers at most. Now, it’s difficult to count the number. Before, there were only a few decent restaurants. Now, there are endless possibilities when it comes to dining out. I’m happy I was able to see the growth. Recently, the trend of food trucks (like the trend of burgers) has the city in a frenzy- they’ve been popping up all across town.

Last weekend, there was what I like to call, a food truck festival of the sort near the Palace of Culture. So I went (with the fam). I thought there would be a hundred or so trucks, but there were far fewer. This did make things easier when it came to choosing what to eat.

I ordered a pulled pork sandwich- which was not great. It was too vinegary for my liking. But my mom ordered a delicious vegan burger- it’s surprising how delicious they taste. We also ordered pork dumplings. “Good things come to those who wait,” they say. We had to wait around 10-15 minutes- which is a significant amount of time for a food truck.

There was a long line, though and it was well worth the wait. Later, to satisfy my sweet tooth, I bought mini Dutch pancakes. They were hot- fresh off the griddle, drenched in warmed Nutella. I’d say I was very much satisfied. Speaking of pancakes. Today’s recipe is for oatmeal pancakes- I also like to call them oatmeal cookie pancakes because everything you love in an oatmeal cookie is found in these pancakes, which are also healthier.

And trust me- these are mind-blowing. Like, woah. Soft, fluffy, full of cinnamon and oats- which greatly enhance the flavor. Occasionally I like to toss in some dark chocolate chunks. Chocolate makes everything better. Truth. I like these pancakes because they are healthier than an ordinary pancakes, meaning I can compensate by buttering them up nicely and drizzling a generous amount of maple syrup on top. You’ve got to make sure you don’t over mix, which will result in a slightly tough-rather-than-fluffy pancake. The day I made these, I was craving thick, fluffy pancakes.

And since it’s summer and I’m ashamed to say I have no motivation to exercise, I wanted to keep things a little healthier. To shake things up a bit, I decided to add oats, chocolate and cinnamon. They took less than 1o minutes to make and serve- my mom and I devoured the lot.

1. In a bowl, mix the oats, flour, cinnamon, baking powder, salt and brown sugar till incorporated. 2. Add the egg, milk, yogurt and vanilla and blend just to combine. 3. Fold in the chocolate (if using). 4. Grease a saucepan or griddle with vegetable oil and spoon mounds of batter, spread apart evenly. Spread slightly to create an even circle. 5. Cook for 2-3 minutes on each side or until golden brown and serve piled on top of each other with some fresh fruit, maple syrup and/or butter.

My true favorite, as the child of New England parents, is REAL maple syrup, as it was originally conceived--pure, unadulterated, boiled-down sap of the maple tree, with no artificial additives or extra sugars. And very pricey, as well--it is a rare treat! Thanks for reading, Dolores! I love the stuff too much and have sworn off waffles because of it. Syrup of any kind is so high in calories. It's evil. But, I can't bring myself to hate it.
