Disabled by Junk Food?
The headline in the brand new York Daily News was fairly alarming:
"Study: Teenager Went Blind on Diet of Mostly Junk Food."
I immediately thought this was hyperbole; we all know that junk meals is so-named as a result of it's the antithesis of health food, but wouldn't it actually cause blindness? The U.K. teen was a self-described fussy eater, preferring Pringles, French fries, white bread and the occasional slice of ham or sausage in lieu of fruits, vegetables, dairy merchandise, eggs, beans, and lean(er) meats and proteins.
At age 14 he complained of tiredness. He was given just a few injections to boost him up, given dietary "recommendation," and sent on his manner. His physician performed a few assessments and decided that the younger man was affected by anemia and low B12 levels.
A yr later, he was complaining of hearing loss and visible issues, but the docs could discover no trigger. He had a extreme vitamin B12 deficiency and low ranges of copper, selenium, vitamin D, and reduced bone density. It was then that the severity of his situation was finally found. By his food plan, he had given himself nutritional optic neuropathy, an irreversible condition. Two years later, at age 17, he was legally blind.
The take-away from that is that nutrition is more than calorie depend. He didn't look malnourished. Please don't sacrifice your long-term health for a fast-repair loss of 10 or 20 pounds. You might be essential. Here was a young individual of average peak and weight. Even when one does not go to the extremes of this younger man, it is best to suppose twice about fad dieting. Your health is vital. In reality, he was consuming the right amount of calories, but they have been empty calories with little nutritional worth.
Let's Get Started
Are you ready to look into right this moment's mailbox with me? But, if that is your first visit, let me introduce you to my kitchen. If you are an outdated buddy, you already know how this works.
Each week I obtain questions about food substances, cooking or baking phrases or strategies, requests for recipes, and queries about nutrition. Absolutely anything food-associated has been coated here.
I'm sharing this previous week's questions and my responses; it happens every Monday. You possibly can go away your query within the feedback under, and next week the answer can be proper here. It's that straightforward. Want to affix in the enjoyable?
The first question right this moment comes from John Hansen (aka Jodah).
What is Angel Food Cake?
Oh here is a question for your series. What precisely is “angel food cake” and the way did it get its title?
"Mirror, mirror on the wall. Who's the fairest of them all?"
John Hansen (aka Jodah) thanks for a terrific query. But, in contrast to chiffon and sponge, angel food (1) is manufactured from whites solely, no yolks and (2) there is completely no fat in the recipe-no butter, shortening, or oil. Chiffon and sponge cakes are in that category too. It's categorized as a "foam cake," that means that it will get its puff (elevate) from overwhelmed eggs, not baking powder or baking soda. Angel meals cake is in contrast to every other cake made.
Angel food first turned a "factor" within the late 19th century. Stewart's recipe called for eleven egg whites, sugar, flour, vanilla extract and cream of tartar. There isn't a absolute story on the origin of the name; one can assume that it was dubbed "angel" food because of its ethereal, heavenly gentle quality. The home Messenger Book of Tested Recipes, 2d ed., 1878, by Isabella Stewart, contained the first recipe for Angel's Food Cake.
P.S. though I can write words of reward for angel meals cake, it would not be my choice from the dessert cart. On a scale of 1 to 10, I give it a minus 3.
Keeping Kids Safe in the Kitchen
"Tonight the artwork of grating. Be careful fingers. Uh Oh -- you can now simply add a straightforward peasy for kids part in your articles."
Eric, I’m pretty certain that your Gabe not only is aware of all of these guidelines, he could probably educate the course (he’s 9 occurring 39). But for everybody else who might have little folks serving to in the kitchen, listed here are some pointers:
Staying Clean and Healthy
Wear an apron (or an old shirt) to maintain your clothes clean. Loose-fitting clothes can bump issues on the flooring, get caught in mixers, catch on fire, etc. Roll up your sleeves, tie back your hair, and don’t wear dangly jewellery (this goes for adults too). But, don’t put on anything massive and baggy.
Wash your hands. Wash earlier than you do anything else. Then wash once more when you contact uncooked meat or if you contact your face.
Don’t lick your fingers while you are cooking/making ready food.
Washing as you go is a good idea, but don’t ever put sharp knives into a sink stuffed with soapy water.
Wipe up spills once they occur in order that nobody slips and falls.
Preparing
Get everything prepared. Even skilled chefs do this. The identical goes in your components. They name it mise en place. Get your mixing spoons, bowls, measuring cups and spoons, and knives out. Instead of running again and forth for stuff from the pantry and refrigerator, gather all the things you’ll want ahead of time.
Read your recipe before you begin. I've a story to tell you-as soon as my daughter decided to bake a cake, all by herself. You’ll also know when to add issues-they don’t all the time go in at the same time. She mixed and combined and dumped it within the pan. That means you’ll know what happens first, what the next step shall be, and so on. What came out tasted okay, nevertheless it sure didn’t appear like a cake. She was able to learn the checklist of ingredients and knew how one can measure, and so she did simply that. The entire flour, the sugar, eggs, butter, and baking powder went into the bowl at the same time.
Keep things that will burn away from the cooktop-paper towels, dish towels, and potholders.
Staying Safe
Never put water in a pan that has sizzling oil in it.
Always turn the handles of pots and pans away from you. In the event that they stick out and overhang the front of the cooktop, you would accidentally get bumped and spill on the flooring, or on you!
Never seize a sizzling pan with a wet potholder.
Use a kitchen timer so that you don’t forget one thing in the oven or on the cooktop. Even the better of cooks can’t remember all the things.
When stirring a pot on the stove, all the time hold onto one among its handles in order that the pot doesn’t spin away from you.
Don’t level knives as anybody and always choose them up by the handle. Never use a knife without supervision. Ask an adult to show you the way.
We're Organized
Did you know that there's a Table of Contents for this series? I have created an article that gives a detailed listing of each question I've received. Each query is definitely a hotlink back to the original put up. It's broken down by category, and inside each category, the questions are listed alphabetically.
Here's a link to that Table of Contents.
I've additionally cataloged all of my private recipes that I have shared with you on this weekly Q&A series and in all of my different articles as nicely. The link to that Index is right here. There are hotlinks to every recipe and this can be updated as new recipes are shared.
Bye For Now
Let's do that once more subsequent week. If in case you have questions about foods, cooking strategies, or nutrition you possibly can ask them right here. Or, you may write to me personally at this email tackle: lindalum52@gmail.com. If you wish to study more, let's do it together. Present your questions, your ideas, your comments beneath. In case you are searching for an old recipe or need ideas on how to improve an existing one I can aid you.
And, I promise that there'll all the time be no less than one photograph of a kitty in every Monday post.

Thank you for offering such a nicely thought out reply to MizB. So people even advocate a uncooked weight-reduction plan. I've a fur child too and we have struggled with what to feed him. After i learn her remark I used to be enroute and not able to write down much. (I might ever go there). Maybe it's time for a slight departure and commit one Q&A to pet meals again.
MizB, thank you a lot for posting this remark. Fortunately, all three are very healthy and i definitely don't need to change that! My girls will likely be 12 subsequent month and my boy simply turned 11. Your remark simply might have extended their lives. I used to be so close to switching my cats' dry meals to grain free (I feed them twice a day with Rachel Ray Indoor Dry mixed with Friskies wet).
While you give it some thought, all of us need roughage. The roughage is important for cats to spit up their hairballs - or hair "tubes", as I name them. That comes in the form of grains and certain veggies.
Leave it to a kitty-monitored meals site to carry nutritional information to humans and the cats who personal them! Tee hee.
Excellent point.
Similar to so as to add relating to the teenager going blind: Have you ever been maintaining with the deaths of canines and cats from grain-free pet foods? I stated I would by no means join the fad and feed my cats grain-free meals, then I learn the find print and discovered that the favourite dry meals they've been eating for a few years is grain-free. Fortunately, the vet says they are wholesome. I instantly switched them and instructed them this can be their new "favorite" food.
Fads are killing our pets, too. People must learn the label on their pet foods, too. I may be gluten-free by necessity, but even I'm not grain free.
MizBejabbers, I do nearly all the cooking in our family and the few occasions that Mr. Carb cooks it's higher for all (or at the least for my blood pressure and/or sanity) that I not be there to witness.
Those outdated canines are stubborn.

Linda, Great question concerning the angel meals cake, an previous Southern favourite. What a disappointment. They were my favorite cake till I used to be prescribed gluten-free. Our local Kroger stores sell the very best ones, especially the bitter cream angel food cakes. Once I bought a sponge cake thinking it was the identical as angel meals.
I read your listing of "don'ts" for youngsters. Oh well, you cannot teach some old canine new methods. My husband is our cook, which I've probably talked about. He each day violates practically every considered one of them, and there's nothing "mommy" can do to show him to do higher.
Wow Lori, that's one trippy story. After all I could mop and wash and work the heat however that was as a result of I was manager. Back in my day of restaurants the waitresses were not even allowed in again. Not even dishwashers - may come close to the oven/stoves. One on one spaghetti with Gabe nearly puts me into anxiety mode.
Lori, I'm glad to listen to that the proprietor of the McD's stepped in and made positive that little boy was out of a hazardous environment. Imagine the liability!
I really like writing in regards to the history of meals, hence my e-book. And, such as you I'm appreciating this rain-crammed PNW day.
Eric, not only are you not violating copyright, you might be doing precisely what I hoped would occur.
I'll probably never know the joy of getting grandchildren, however I can really feel the warm glow of realizing that Gabe appreciates his Aunt Linda.

Whahoo I had a quick meals hamburger yesterday and fries and onion rings.Still really feel the bloat 24 hours later. Now I make my 9 12 months previous go hiking on cliffs and swimming in rivers but I'd by no means expose him to a quick meals weight loss program. Can you even think about incorporating that in your diet. (psst I did not tell him in regards to the burger)
I hope I am not violating copyright -- Your safety tips are now posted on the fridge. He did the cooking final evening with me pretending not to pay attention - Ok a little with spice, and a fireplace extinguisher inside attain.
You deliver love to life. I know a bit about life and dying and love. You keep us on the appropriate side and have made slightly boy happier in it - and healthier ;-) Not to mention his dad and mom.

Great advice about youngsters in the kitchen. Hot oil, scorching espresso (everybody is aware of McDonald's espresso is dangerously sizzling), and dozens of different hazards. We were principally involved about his security. The proprietor got wind of it and put a cease to it. That's really not what you had been talking about as much but it surely triggered that memory. When i labored at McDonalds years in the past the manager from hell used to convey her 5-year-outdated son in as a result of she did not or could not afford a babysitter. Not solely was he underfoot, but he and the staff had been put in potentially dangerous conditions.
I like the way you give historic info on food. And now, I'm off to make breakfast on this rainy Pacific Northwest day.
Mary, that is a very good query (about the angel food cake). I'll answer that next week.
I'm glad that the worst that occurred in your kitchen was a mess to wash up. Could have been a lot worse!

Hi Linda,
My husband talked about that story to me in regards to the boy who went blind. You're proper, individuals go crazy counting calories and never fascinated about if something is sweet for the physique or not. I still indulge often in cookies and ice cream but it's balanced off by my oatmeal and salads.
When I was young we had angel meals cake as my father had a coronary heart drawback, so fats was off the menu. Is it necessary to make it in a bundt pan? I have never had it in quite awhile but I remember having fun with it.
We had precisely that kitchen accident this week the place a handle wasn't turned in. A pan stuffed with onions and oil, hit the tile ground. What a large number!
Have an excellent week.
Sha, I'm shocked. You suppose you really know someone, after which they say something completely out of the blue that knocks your sock off. "What's flawed with angel meals cake?" Flourish summed it up pretty nicely I assumed. It feels just like the sponge you utilize to clean dishes.
I'm glad to have you ever again here. That storm had me involved. I hope you're effectively.
Bill, the change in seasons means I need to get out there and do the fall cleanup. I hate saying goodbye to the flowers, however like you I'm having fun with this cooler weather. There's tons to do.
Pamela, it's good to hear from you. That stuff is just too harmful. Like you, I hardly ever bake anymore.
Thank you Flourish. I thought I was alone in the world.

Hey, Linda! I know I have been MIA lately and i apologize for that.
I love, love, love your tip about turning the handle of a pot or pan away from you. That's the best way I used to be raised, as properly. It blows me away that on just about each cooking show I watch, including "Chopped", the place the cooks are dashing about and behind one another, chefs leave the handles sticking out over the stove! ! Don't they know higher?
And what's fallacious with angel meals cake? I like it!

Loving the rain...Happy September my friend!
