Derdriu, I think you may have already visited ny Osso Bucco hub, I like these much less common cuts, not simply because they are cheaper, but they have more style. My mum was an ideal cook with cuts corresponding to skirt, shin, chuck and could make them tastier than sirloin. The butchers now that too.

Tony, Osso bucco is a favourite of mine from Italian cooking. It may be so attractive, tender and tasty.
But this recipe seems like something that might change into a tradition. Particularly, I look ahead to the wholesome interplay between the basil, garlic, and candy onions. Very under rated, I also use skirt generally, it needs the same sloooww cooking however although a bit fattier it's great with a few kidneys in a pie. Yum Yumm
