I'm also on a quest to duplicate that fantastic style/texture of Joyva Halvah. I'm on my second recipe (the primary was terrible)which promises that if I put it into the fridge for 36 hours the sugar crystals will grow forming that great texture. It's 12 hours up to now and it nonetheless seems to be like a smooth taffy (however scrumptious). The recipe was tremendous straightforward although--only honey heated to the soft ball stage and beaten tahini folded in, then poured right into a pan to chill for 36 hours. Just not the texture I'm on the lookout for.
