All of 2012 I've featured a unique nation each month, except the month I was travelling in Sri Lanka. But with all my Xmas cooking and other posts, I unfortunately didn't get the time to make and share all the issues that I'd have preferred - so I ended up posting a couple more in January. I took a month off the featured nations this month, as I fancied having a break.

Starting tomorrow - the first February - I'll be again on the World Food Challenge for one more year. Tomorrow we'll begin delving into the delights of Costa Rican cuisine! I'm very excited and I've been busy consulting individuals who know extra about it than I do to devise a scrumptious array of veganised Costa Rican dishes.

Chilli Pone

This is a dish that I had never heard of until a reader prompt that I try it for USA month. I'm so glad they did because it was wonderful and I'll positively be making it once more! It's an American "chili" model casserole - the chili is made from bulghur instead of mince meat - with scrumptious light and crispy cornbread baked on top. Possiibly my favourite dish of the month (although, that is a tricky call and i might change my mind later...) Check out the recipe here. As soon as I ate it I questioned why I hadn't always been placing cornbread on my casseroles!

Succotash


Keep in mind that cartoon character that used to say "Sufferin' Succotash!" (I feel it was Sylvester?) Well, I can't think about how succotash may cause suffering to anybody! Take a look at the recipe right here. But I gave it a go and goodness was it good! At first glance I assumed it seemed a bit plain and boring - it is simply a big pot full of beans, corn and tomatoes. It's lightly but perfectly spiced, and a good reminder that vegetables are simply scrumptious just the way in which they were made and stand up perfectly as the principle occasion of a meal! The succotash was an enormous hit with my dinner visitors.

Vegan Mushroom and Bean Jambalaya


Jambalaya is a new favorite of ours now! It's jam packed filled with flavour and you do not miss meat in it in any respect - why would you when you've got bought juicy discipline mushrooms, two forms of beans and tasty vegetarian sausages all by way of it?
