Baked Garlic Lemon Tilapia

Classic sauce of butter, lemon and fresh parsley goes perfect with any fish. I try to nibble on fish twice per week. For a quick healthy dinner on the busy weeknight, it is simple and delicious.
Ingredients:
4 cloves garlic, crushed
4 tsp fresh parsley
Preheat oven to 400°.
Melt butter with a low flame in a tiny sauce pan. Add garlic and saute on low around 1 minute. Add the fresh lemon juice and disconnect flame.
Spray the bottom of a baking dish lightly with cooking spray.
Place the fish ahead and season with salt and pepper. Pour the lemon butter mixture about the fish and top with fresh parsley.
Bake at 400° until cooked, about quarter-hour.

I made this tonight for lunch and it was delicious.
The change I made was doubling the garlic (because I love it and figured some would slide over fish to the dish when serving).
I microwaved an artichoke generating the WW light aioli ( ,recipeid=218981 ) to offer with both artichokes and fish. GREAT meal!
