Baked Tilapia Veracruz


4 cups cherry tomatoes

2 tablespoons extra virgin olive oil


2 cloves garlic , sliced

1/4 cup golden raisins


1 tablespoon capers, drained

Kosher salt and ground black pepper

Directions


Thaw fish, if frozen. Preheat oven to 350 degrees F. In a large skillet cook tomatoes in extra virgin olive oil over medium heat about 6 minutes or until softened and skins continue to split. Add garlic; cook and stir about 1 minute or until fragrant. Remove from heat and stir in olives, raisins, capers, and oregano. Transfer into a shallow 2-quart baking dish.

Season tilapia with salt and pepper make on top of vegetables. Bake, uncovered, for 20 to 25 minutes or before fish sets out to flake when tested which has a fork Sprinkle with chili powder and snipped cilantro, if desired. Serve with lime wedges.

I made this for lunch last night and my spouse LOVED it! He cleaned his plate and requested more. I managed to make it with couscous plus it paired rather well!
