In a medium mixing bowl stir together the flour, sugar, baking powder, and salt. Make a well down the middle of the dry mixture; reserved.

In another medium mixing bowl combine the egg, milk, and oil. Add egg mixture at one time to the dry mixture. Stir just till moistened (batter ought to be lumpy).

For standard-size pancakes, pour about 1/4 cup batter onto a hot, lightly greased griddle or heavy skillet. For dollar-size pancakes, pour about 1 tablespoon batter onto a hot, lightly greased griddle or heavy skillet. Cook over medium heat about 2 minutes on either side or till pancakes are golden brown, looking at second sides when pancakes have bubbly surfaces and edges are slightly dry. Serve warm. Makes eight to ten standard-size (4-inch) or 36 dollar-size (2-inch) pancakes (8 servings).

Buckwheat Pancakes:

Prepare Pancakes as at left, except substitute 1/2 cup wheat grains flour and 1/ cup buckwheat flour for that all-purpose flour; substitute brown sugar for that sugar. Nutrition Facts per serving: 111 cal., 5 g total fat (1 g sat. fat)

Buttermilk Pancakes:


Prepare Pancakes as at left, except reduce baking powder to a single teaspoon and add 1/4 teaspoon baking soda to dry mixture; substitute buttermilk or sour milk with the milk. Add additional buttermilk to thin batter, as appropriate. Nutrition Facts per serving: 111 cal., 4 g total fat (1 g sat. fat)

I too received the Better Homes and Gardens recipe book when I was obviously a young bride, and it would be a mainstay during my kitchen; my head over to book for everything.

ing these pancakes each one of these years. Raised my children on these delicious, fluffy pancakes I add vanilla for cake like taste. Best pancakes ever. Near and dear to my heart. Thank you Better Homes and gardens for teaching me how you can cook as being a young bride so many a long time ago.

I accept ALR. These (particularly the buttermilk version) are awesome pancakes and 1,000 times greater than anything that comes from a box mix. That's all of my mom ever produced, and I couldn't know how delicious homemade pancakes were until I tried this recipe. Don't even ought to try some other. Makes awesome waffles, too. Just make sure you follow the directions to go away lumps from the batter , nor over mix. That may be why everyone is thinking theirs arrived on the scene too runny, I don't know. I've never messed these up.

I've been causeing this to be recipe since I would be a middle school kid the 70s using my moms cookbook...I'm still thus, making this recipe

If doesn't necessarily rise properly maybe the baking powder was old...if batter too thin, maybe ingredients not measured accurately

Its always perfect, it always produces lovely, light perfect texture pancakes

Batter proved rather thin. Next time adding less milk. Didn't rise much.

I should amend the previous recipe to the present one. With less flour, will be a bit lighter. Ratios can be easier to amend.
