Ingredients


2 slices whole grain-bread, processed in the food processor (or perhaps use 1/4 cup whole-wheat breadcrumbs)

1/4 cup grated Parmesan cheese


1/4 teaspoon sea salt

1 tablespoon extra virgin olive oil


Preheat oven to 375 degrees.

Combine the breadcrumbs, cheese, salt, pepper, and olive oil inside a bowl and mix well.


Coat the fish together with the breadcrumbs and lay using a baking sheet. Bake until fish is browned and cooked through, 7-10 minutes.

This really was good! I added the juice of half a lemon and ended the bake on broil to obtain a crusty finish for the breadcrumbs. Deeeelish option to fried fish.
