One of my first yet still favorite cookbooks may be the Fresh Food Fast cookbook by Cooking Light. It features page after page after page of healthy, easy recipes with small ingredient lists and almost no prep time. UK friends, can you tell me about it Waitrose, Is it a product, A store, Both, I have now bought four Waitrose items from my local Filipino food market and I am in the moon excited about all four things: the apple chutney in the apple quinoa salad , ginger beer, gummy babies (definitely creepy yet soooo ridiculously good), and this also lovely pesto that I piled on my own tilapia.
I had one reader comment that Waitrose would have been a little bit expensive within the UK, nevertheless for whatever reason it seems like to be a great deal cheaper than the American brands we obtain here inside the Philippines. You probably guessed this already however the best part coming from all this is how the Parmesan gets to be a little crispy-crunch to it since it broils so beautifully. Pair utilizing the delicately flaky white fish along with the fresh tang in the tomatoes, therefore the thick and smooth basil sauciness in the pesto… ohhhyeah. I use a thing for texture. And cheese.

Parmesan Pesto Tilapia
Description
This simple Parmesan pesto tilapia is broiled into a cheesy golden perfection and topped with pesto and fresh chopped tomatoes. Just 5 ingredients.
Ingredients
1 cup fresh chopped tomatoes
salt, pepper, fresh lemon juice, melted butter
Instructions
Preheat the broiler. Pat the tilapia dry using a paper towel. Place with a baking sheet lined with foil. Coat the foil with cooking spray or coconut oil to prevent sticking.
Sprinkle each fish filets with 2 tablespoons of Parmesan cheese. Broil for 10-11 minutes or before the fish isn't translucent as well as the cheese is browned about the top.
Top each filet with fresh tomatoes and also a tablespoon of pesto. If you have extra Parmesan, add only a tiny bit above the top from the fish, tomatoes, and pesto - it could look really pretty. 🂠Top with salt, pepper, fresh lemon juice, and/or melted butter.

You guys, I am now officially done cooking with this little apartment. That's a bit sad given it's been a very great year of food, as well as a little happy given it's h-t for the reason that kitchen.
