DIY Pancake Mix Recipe

My kids love pancakes and now that they’re older, they make their own.
It’s really easy to make pancakes from scratch but it’s even easier to whip up a big batch mix using my favorite pancake mix recipe and you’ll have quick pancakes for weeks to come. Just a few dry ingredients and you’ve got perfect mix for just pennies! In fact, most pre-made baking mixes are typically simply mixtures of very simple, common dry baking ingredients.
The best part is you know exactly what’s in it, no strange ingredients here! Don’t be afraid to play with this recipe! Add in blueberries, chocolate chips, mashed bananas, coconut or whatever else you like. 1. Combine all ingredients. 2. Store tightly sealed in a cool dry place. 1. Preheat & lightly grease a griddle or pan over medium to high heat.
2. Combine 1 cup of pancake mix with egg, milk & butter or oil. 3. Pour 1/3 cup batter and cook until bubbles on the surface of the pancakes have popped (about 3-4 minutes). Flip and cook until the underside is light golden (another 1 - 2 minutes). Each 1 cup of dry pancake mix will make approximately 5 pancakes. 3. Fry for approximately 2 minutes on either side or until the pancakes start to brown. 4. Serve immediately with some chopped fresh fruit. My 9 month old twin girls were HATING eating solids. I tried these pancakes and finally found something they enjoyed eating and that I felt safe letting them snack on! I added some cut up blueberries to a few and they loved that as well!

We used the organic virgin coconut oil we bought for his dry skin when he was born so it wasn’t such a bad idea getting it all over his face & hands! So glad he liked them Kim. I use coconut oil to cook them in too.
Gives them a lovely subtle taste! Made these for my toddler this morning after she asked for pancakes and I realised we were out of milk! Thanks for rescuing me with this recipe! Really good and lovely with fresh fruit. If I don’t have any bananas could I use Gerber’s baby food banana’s, I’m not sure as I haven’t tried it myself, sorry. Made these this morning for my 8 month old and he LOVES THEM. So easy and super delicious. I tried it today my baby loved it. Will save some for her breakfast tomorrow. Thanks for sharing ! I’m going to try these tonight for my son. What do you consider to be a large banana, I’m worried that I might not use enough egg or that if I use two, they won’t turn out right. Use your judgment as eggs and banana can sometimes be different sizes.
You can add a little flour or oats if they are too runny. Thank you so much for the recipe. I was just wondering if i can cook them a night before and put it in refrigerator and give my baby in the morning. Should it be fine, Hi Falak, that would be absolutely fine. You could warm them gently in the microwave if your baby doesn’t like cold food.
