I know it is hard to believe we have a Low-Carb Banana Nut Pancake Recipe, but let me tell you a little secret-there aren’t any bananas in them. Yes, you heard me right. No bananas at all. Instead, we get the taste of banana using banana flavoring. 1. Place eggs, sour cream, granulated sweetener, vanilla extract, banana extract, and brown sugar flavoring (if using) in a blender.

Pulse a few times to blend. 2. Add the almond flour, coconut flour, baking soda, and sea salt to the blender. Pulse to combine. Add nuts to the blender and pulse a few times at a low speed to chop the nuts. 3. Heat a well-seasoned griddle, non-stick skillet, or seasoned crepe pan over medium-low heat.

We actually caught one of these mix ups on camera… and it was not my best moment! 1. In a large bowl, whisk dry ingredients together. 2. In a separate smaller bowl, mix together to eggs, milk and oil. 3. Add the wet ingredients to the dry ingredients and stir just until moistened. Don't over mix, the batter will be lumpy.

4. Bake on your griddle or stove top until golden brown on both sides. I learned from my mother in-law to put a small capful of vegetable oil on your griddle before pouring your batter. This will make the outside of your pancakes just a little crispy, but the insides will still be soft and fluffy!

Seriously, how good do those look, My grandma would seriously be so proud. I was always her favorite anyway! I mean, they aren’t exact to her recipe, but they are pretty fantastic. Also, my husband thinks I have this perfect thought in my mind of how the pancakes were, and even if this recipe is 100x’s better than my grandma’s, I won’t ever let anything compare! … he’s probably right.
