Throw a Summertime Pancake Party! Summertime is the perfect time to throw a pancake party! Invite the neighborhood kids for a fun morning eating the most delicious lemon ricotta pancakes. It’s the perfect way to celebrate summer! We invited some special friends over the other morning and had an awesome time serving pancakes outside on our griddle and being silly.
We broke out of new Blackstone 36″ Griddle Cooking Station - it is the ultimate way to cook outdoors. My husband cant wait to take it camping. ’s really cool because it has fold-able legs so we can put it in the back of the car for our camping trip. You can cook basically anything on the griddle - eggs, pancakes, meats, veggies. We are actually using it on Father’s Day for a big family brunch to make a GIANT batch of hash browns and bacon - yum!
And it would be PERFECT to cook up pancakes for a neighborhood Fourth of July breakfast. I also love that you can take the griddle off for EASY cleanup! The Blackstone griddle surface heated so evenly, the pancakes cooked up in minutes. They were SO good! We have a very small side yard that we haven’t really used. I decided to make a little party space there and it was fun seeing it come to life.
I put a farmhouse picnic table in the corner of the side yard with a festive striped umbrella. We put our new grill next to the table. Then I spray painted an old cart and turned it into a pancake topping station. We whipped up the pancakes and then the kids headed over to the topping station and put fruit, whipped cream and whatever else they wanted on their pancakes. It was the first gathering that we hosted in our new party side yard and it was SO fun!
I also have some free printable party cut files that you can download and print out! Invitations, posters, banners and more. But in the meantime, grab this recipe for the FLUFFIEST Lemon Ricotta Pancakes with Homemade Blueberry Sauce! 1. In a mixing bowl, mix water and baking soda until combined.
Then add ricotta cheese, lemon zest, suga, egg yolks and almond extract. 2. Melt butter in microwave and add melted butter to mixing bowl. 3. Add lemon juice and flour to mixing bowl and mix until everything is incorporated. 4. Pour batter into a medium mixing bowl. Wash mixing bowl out and add egg whites to clean mixing bowl. Whip egg whites until fluffy peaks form. Gently fold whipped egg whites into pancake batter.
Let batter sit while you make blueberry sauce. 1. In a medium saucepan over medium heat, combine blueberries, 1/3 cup water, orange juice, sugar and lemon zest. Stir and bring to a boil. Cook for 5 minutes or until the blueberries are soft and sauce thickens slightly. 2. In a small bowl combine cornstarch and 1/4 cup water. Gently stir the cornstarch mixture into the blueberry mixture on the stove.
Simmer and sauce will get noticeable thicker. 3. Keep cooking until sauce is desired consistency. 4. Take pan off stove and add almond extract and lemon extract. 1. Heat griddle to medium-high heat. Grease griddle, then and add two large spoonfuls of pancake mix for each pancake, smooth them to creating circles. Let cook 3-4 minutes, until surface of pancake starts to bubble and the edges of the pancakes start to look drier, then flip over and cook an additional 3-4 minutes.
2. Because these pancakes have ricotta cheese they take a little longer to cook that regular pancakes. If you find that your pancakes are not cooking all the way through in the middle, you can turn your griddle down to medium heat and cook each side 5 minutes. They will rise as they cook and become fluffy!
